Cottage Cheese Protein Bowl Recipe (35g Protein)

 1 cup 2% Cottage Cheese
 2 l Eggs
 ½ cup Cherry Tomatoes Cut In Half.
 ½ cup Diced Cucumber
 ¼ Sliced Medium Avocado
 1 tsp Everything Bagel Seasoning
 1 tsp Chopped Chives or Dill
 Black Pepper, According to Taste
 1 drop Lemon Juice If You Like
 Hot Sauce, Optional

Boil the Eggs

Place 2 eggs in a small saucepan and cover with cold water. Bring to a boil. Once at a boil turn off the heat, cover the pan and let the eggs sit in the hot water for 10 to 12 minutes. Place eggs in a cold water bath. Once they are cool enough to handle, peel off the shells and cut each egg in half.

Cut the vegetables.

  • Wash the cucumber and tomatoes.
  • Dice the cucumber.
  • Cut the cherry tomatoes in half.
  • Add the ricotta cheese.

In a large bowl, take one cup of cottage cheese. Place it at the bottom to form a level base.

If you enjoy the taste of cottage cheese but don’t care for the curds, blend it out for 30 to 60 seconds. It comes out smooth and creamy yet still retains its protein.

Add what you like of our toppings.

Place cucumber, tomatoes, avocado, and cooked eggs on top of the cottage cheese.

Sprinkle in some black pepper and fresh herbs. Also try adding lemon juice for that hit of freshness.

If you like spicy foods, go for hot sauce.

Taste the bowl before adding salt.
