Shrimp Scampi Recipe

1 lb (450g) large shrimp, peeled and deveined
 3 tbsp Olive Oil
 4 tbsp Unsalted Butter
 4 Garlic cloves, minced
½ cup Dry white wine (or chicken broth)
 1 Juice of 1 lemon
¼ tsp Red pepper flakes (optional)
Salt and freshly ground black pepper, to taste
 ¼ tsp Fresh parsley, chopped
12 oz Spaghetti or linguine (optional, for serving)
1

In the first step, we are going to cook pasta in salted boiling water until al dente, if using. Reserve ½ cup of pasta water.

2

In the second step, we’ll heat olive oil and 2 tbsp butter in a large skillet over medium heat.

3

In the third step, we are going to add garlic in the skillet and will sauté it for 1 minute or until it gets fragrant.

4

In the fourth step, we’ll stir in shrimp, season with salt, pepper, and red pepper flakes, then cook it for 1-2 minutes per side until it gets pink. Remove shrimp and set aside.

5

In the fifth step, we’ll pour in white wine and lemon juice then simmer it for 2-3 minutes to reduce slightly.

6

In the sixth step, we’ll return the shrimp to the skillet, toss in the remaining butter and parsley then we’ll mix it until the shrimp are coated well.

7

At the end, we serve up the fresh shrimp scampi. We put it over pasta, rice, or with that nice crusty bread which is a great way to enjoy it.
